New Restaurant Coming to Downtown Guilford


Contractors are at work inside the former Colors Café. A new restaurant, Carson’s on Whitfield, is expected to open this summer featuring American-style cuisine.

The rumors are true—a new restaurant will be coming to Guilford. The space on the corner of Water and Whitfield streets, formerly Colors Café, will now be filled by a new American-style restaurant, Carson’s on Whitfield.

Business partners Jim Kirtopoulos, owner of GW Carson’s Burger bar in Branford, and Ginway Lin, owner of 9East in Branford, will open the restaurant together. While there was some speculation that the new restaurant would be similar to GW Carson’s, Kirtopoulos said it will be very different.

“It will not be like GW Carson’s,” he said. “It is not going to be a gourmet burger bar—[it’ll be] more American. It is going to be more upscale dining.”

Following the success of GW Carson’s, Kirtopoulos says he is excited to open a restaurant in town and believes Guilford is ready for more dinning options.

“This will be our second restaurant but we just love the location with the beautiful views of the Green,” he said. “There are not a lot of restaurant choices in Guilford with the Stone House closing, and there is nothing with a nicer-sized bar area in town.”

Kirtopoulos confirmed a lease had been signed for the space and that they are currently doing exploratory demolition to finalize plans for the space.

“We are going to create a Manhattan-style atmosphere in there,” he said. “We are looking to seat 84 combined with the bar.”

Right now the plan is to open the restaurant in the summer.
