Nibbles: Too Many Tomatoes?

As I was visiting my friend Joan Gordon in the hospital, we started kibitzing about cooking. Because tomatoes were so late this year, with no killing frost on the horizon, we wondered what to do with this late bounty. One friend makes sauce in the slow cooker. She washes the tomatoes, dumps them into the cooker, adds herbs and oil, and turns it to low. In a few hours, the sauce is done. She is able to pulls out the cores and peels easily, and the sauce is done. I will be attempting this next weekend and freezing jars of those red beauties for the winter.—Lee White
