Nibbles: Spring Radishes


Looking back to when I was a kid, my parents ate things I couldn’t stand: grapefruit, cabbage, lox, raw onions, and radishes. I particularly did not like radishes. Today I like raw or cooked cabbage. I still don’t much care for grapefruit. I prefer gravlax to lox and caramelized onions to raw. And I love radishes. Radishes are one of the first vegetables to come out of the garden in the spring and, when they are young and fresh, I can eat them raw, like an apple. I also love a crusty baguette covered by sweet butter and topped with thin slices of fresh radish. Maybe more than a few can become a meal. Sometimes the simplest meal can be that heavenly.
