Nibbles: Ready, Set, Cookies


This might be a good time to buy what you need for your holiday baking. Buy the best you can afford. I have at least 8 half-sheet baking pans and have learned that cheap ones will turn your bars, cookies, and cakes into uneven towers of Pisa that are either under- or overbaked. Silpat (silicone baking sheets) turn all your cookies into gorgeous creations. I have four, all just the right size for a half-sheet pan. All are at least 25 years old. I wash them with dish soap, dry them, and store them in a tube designed to store blueprints. If you don’t want to buy Silpat, always use parchment paper. Finally, buy a few racks for the cookies to cool. They, too, last forever. And if money is no object, buy a KitchenAid mixer. It, too, will last forever. My daughter has the one I bought three decades ago, when I wanted a bigger one. Mine is the queen of my kitchen.
