Nibbles: Baking Tips for the Holidays

My condo kitchen is way smaller my old house’s kitchen. When I sold the house, I had to get rid of a lot of stuff. But here are some things that don’t take up a lot of space:

• Buy three 9-inch loaf pans; good ones; they nest together.

• Have at least four half-sheet pans and get really good ones so they do not warp in the oven. These all nest together, too.

• At the supermarket, buy the wooden skewers for shish kebabs; much better than toothpicks for testing whether something is done.

• Buy at least two Silpat baking sheets the size of the sheet pans. They are washable and never get ruined. Keep them in a plastic tube like those used for blueprints.

• Have an oven thermometer, a cheap one, and check your oven every few months. Get a new one thermometer every couple of years.

• Buy a few racks for cakes and cookies. They nest, too.

• You can’t have too many stainless steels bowls. Cheap ones are just as good as expensive ones. They nest, too.

Tell me what else you have to have, even if it’s a little kitchen, like mnie.
