<strong>Nibbles: Chicken Tenders</strong>


I was making dinner for friends and decided to make chicken scampi like they do at one of my favorite restaurants. So I went to Stop & Shop to get boneless skinless chicken I could pound thin and found something even better: organic Bell & Evens chicken tenders chilled, not frozen, and packaged in plastic. I asked someone from the meat department and he said he knew about them. It may be such a new item that it isn’t on Bell & Evans website.

What the heck, I thought, Bell & Evans is a terrific company. Once I opened the package, I saw each piece was about 1 by 4 inches. I sautéed them in a little butter and olive oil on each side for three minutes, then tented them with aluminum foil and put it in a 200 degree oven while I made the butter, oil, garlic, white wine, and salt, added the tenders and half a pound of baby spinach. It wasn’t as good as the ones served in that restaurant, but it wasn’t bad and the tenders, which cost about $8, would have fed four people. I will certainly buy these again.—Lee White
