Once, when asked about his cooking philosophy, chef and cookbook author Yotam Ottolenghi said he wants “drama in the mouth.” The recipes in Plenty do just that. It includes about 120 recipes, all of which are vegetarian. The combination of his Le Cordon Bleu culinary training with his love for Mediterranean and Middle Eastern ingredients creates much of the excitement. If they’re not already, ingredients like pomegranate molasses, preserved lemon, and orange water will become pantry staples by the time you’ve worked your way through these recipes. And that will be a very good thing.
