Mmmmmmm, Mug Cakes


Almost every Friday, members of the Robertson clan and I meet for dinner.

We usually eat at Sneekers in Groton, which is one of my favorite restaurants for a few reasons: The prices are incredibly inexpensive, the menu is inventive, there are always specials, and everything I have ordered here is delicious. The desserts are made by Rhonda’s sister and they are on a blackboard. We order our entrées quickly and choose one of the desserts, because the latter run out early. That night it was a lemon cake.

We started talking desserts, and I asked them if they had heard of the mug cake, perfect for one person and made in the microwave. I have a cookbook called Best Mug Cakes Ever. Here is the one I have made, along with two others. The author suggests self-rising flour, but if you don’t have it in your kitchen, make your own: a cup of flour, 1 ½ teaspoons baking powder, and ¼ teaspoon salt.

5-Minute Chocolate Mug Cake

4 tablespoons self-rising flour

4 tablespoons sugar

2 tablespoons cocoa

1 egg

3 tablespoons milk

3 tablespoons oil

3 tablespoons chocolate chips (optional)

splash of pure vanilla extract

Add all dry ingredients into a large mug and mix well. Add egg and mix well. Add milk and oil, and mix well. Add chocolate chips (if using) and vanilla and mix well. Put mug in microwave and cook for three minutes at 1000 watts (I cook it for about 2 ½ minutes because I like the runny center, but if you’re worried about the egg, cook it for 3 minutes).

The cake will rise over the top of the mug, but don’t be alarmed.

Allow to cool a little and tip it onto a plate, if desired.

Butterscotch Brownie

4 tablespoons self-rising flour

4 tablespoons dark brown sugar (light brown will do)

2 tablespoons beaten egg

3 tablespoons milk

One-half teaspoon pure vanilla extract

3 tablespoons unsalted butter, melted (salted will do)

2 tablespoons semi-sweet chocolate chips, butterscotch chips

or a mix of both

Mix flour and sugar in a mug. Add egg, milk, vanilla, and melted butter and mix well to combine. Stir in chips and microwave on high for 1 minute or until top is dry.

Apple Cinnamon

4 tablespoons self-rising flour

4 tabelspoon brown sugar

One-quarter teaspoon cinnamon

3 tablespoons applesauce

2 tablespoons of milk

2 tablespoons vegetable oil

Cinnamon sugar for topping

Mix flour, sugar and cinnamon in mug. Add applesauce, milk, and oil and stir until well combined. Sprinkle top with cinnamon sugar. Microwave on high for 1 minute or until top is dry.
