A Summer Treat: Food Truck Corn Salad


I’m experimenting in the kitchen again and came up with this summer corn side salad that’s pretty tasty! It has so many fresh summer flavors such as cilantro and lime juice, plus a twist on serving regular corn. I roast it first. If you don’t have easy access to local corn, you can now buy Green Giant brand packets of frozen, roasted corn and skip a step.

I call this the Food Truck Corn Salad as I could definitely envision this as a tasty side dish on a Mexican or Southwest-influenced food truck menu.

Food Truck Corn Salad

Makes about 3 cups

10 oz. bag of Green Giant roasted corn OR 2½ cups corn kernels

2 tbsp. mayonnaise

2 tbsp. fresh lime juice

1 tbsp. red onion, finely chopped

½ cup feta cheese crumbles

1 tbsp. snipped fresh cilantro

1 small garlic clove, finely minced

½ cup diced red or orange bell pepper

Pinch each: chili powder,

cayenne pepper, paprika,

sea salt and freshly ground pepper

Note: if using plain corn kernels, first roast them in a non-stick frying pan, stirring frequently, until lightly browned. Remove corn from pan and allow to cool.

In a medium bowl, whisk mayonnaise with lime juice until smooth. Add remaining ingredients including bag of corn or cooled roasted corn and mix well with a rubber spatula. Taste for seasoning- add more lime juice, salt or chili pepper for zip, if necessary.

Transfer to a covered dish and refrigerate several hours or overnight before serving.
