A Mouth Full of Chocolate


Well, if there’s one thing better than a farmer’s market, that’s a farmer’s market with a booth that sells artisanal micro-batch bean to bar chocolate, using only fair trade, organic, and local ingredients. Sure, that’s a mouthful, but Drew Salko, the owner of The Carbon Chocolate Workshop delivers. On his debut at the Madison Farmer’s Market recently, he sold out all of his stock. His thinking is that fewer ingredients are better, and so he’s picky, and creative, with what he does include in his chocolate. I purchased a milk chocolate made with coconut milk recently, along with a dark chocolate with raspberr, and loved both. Salko and his chocolate will be at the Madison Farmer’s Market on the Madison Town Green on Fridays from 3 to 6 p.m throughout the summer.
