A Dangerous Pancake


I was checking out some new menu items recently at the Tea Kettle Breakfast & Lunch restaurant when I ran across something called an Almond Joy Pancake. I asked Chef Jason Horan, aka one of the Tea Kettle’s chefs extraordinaire, about it and he said they start with the restaurant’s signature pancake mixture, made specially by the owner, David Ciastko, also a chef, who is “obsessed with pancakes,” Horan says. They then add semisweet chocolate, fresh coconut, and sliced almonds. When they flip it over, the coconut gets toasty and the chocolate melts. When it’s done they drizzle some mocha sauce over it. “It’s like having breakfast and dessert at the same time,” Horan says. “And it’s bigger than, say, a basketball is round. One is usually enough. It’s dangerous. We definitely feel like a nut when we make it.” It does sound dangerously good. And if you have food sensitivities, no problem, the chef and staff are well versed when it comes to both paleo and gluten free.
