Nibbles: Bialys


What is better than a bagel? For me, it is a bialy.

Although it is best to consider a bialy a bagel without a hole, that is an understatement. First of all, the dough is baked, not boiled and then baked. Instead of the hole, there is a little indentation, into which thinly chopped onions (and sometimes poppy seeds) are dropped before they go into the oven. They are more crust than bread. They are already thin. They are not shiny.

In learning about bialys, I also saw that some people put the cream cheese and/lox onto the top of a bialy. This way the filling doesn’t fall into the plate.

Best of all, you can usually get bialys—so-called because they were created in Bialystok, in Poland—at Stop & Shop, fresh, in six-packs at a kiosk in the fresh bread and pastry section.—Lee White
