Nibbles: Chicken Pecan Salad With Apples


Like most of us, I have been a bit busy with errands and wrapping presents and baking and cooking for the holidays and writing more since I will be away for a few days visiting my daughter in California. One afternoon, driving from the post office to the supermarket, I was hungry and realized it was around 2 p.m., and I had missed breakfast. I stopped at Wendy’s to get a sandwich and decided I should order a salad instead. I loved the chicken pecan salad with apples, really fresh lettuces, and blue cheese. But the best may have been the cranberry-colored pomegranate dressing made with white vinegar, orange juice, and extra-virgin olive oil. Can’t wait to have it again.
