Bourbon Glazed Salmon


A good bourbon can be consumed in a number of ways. If you're so inclined, pour it straight into a glass and drink it neat or on the rocks. If the idea of drinking it straight is just too much though, a quality bourbon blends well into a number of cocktails. And even better, the combination or bourbon, brown sugar, and soy sauce can be a perfect balance of flavors when used in a glaze on ribs or salmon.

Bourbon Glazed Salmon

Ingredients

Bourbon Glaze

1 tbsp. of chopped scallions

1 tsp. of finely grated ginger

1 tsp. of finely grated garlic

1/2 cup of Jim Beam or other good bourbon

1/2 cup of soy sauce

1/2 cup of brown sugar

2 tbsp. of honey

For the Salmon

3 4-ounce fillets of fresh Atlantic Salmon

2 tbsp. sesame oil

sesame seeds to coat

sliced green onions for garnish

Kosher salt and cracked pepper to coat

Directions

Combine the ingredients for the bourbon glaze in a medium size saucepan and simmer over medium-low heat until thick, about 15 minutes. Season both sides of the salmon with salt and pepper and set it aside. Add the sesame oil to a skillet or flat top and sear the salmon until golden brown and medium in the center, about 2 minutes per side. Plate the salmon and drizzle the glaze over the top. There will be plenty of glaze leftover to use as a marinade or sauce for something else.
